パイナップルトマトと呼ばれる黄色いトマトのカルパッチョの上にさっと火を通したサーディンとカリフラワーをセモリナ粉に見立てたものが添えてあります

わたしは魚を捌くのが本当に苦手で大学での鯵の三枚おろしのテストも最後まで合格もらえないくらいでした。。フランスにきてもこの壁にぶち当たるとは…と絶望してる暇もなくやるしかないと必死で小さい内臓や骨を取り除きなんとか完成

魚を触る恐怖と自分のできなさで冷や汗がすごかったです

そしてバーナーで炙ったサーディンはトマトじゃなくて日本酒のほうがあうだろうな
